Rachel O Brien is a marketing executive at Mitsubishi Electric Europe B.V. Irish Branch.

Her prime responsibility is marketing communications for the FA division, but she also manages the corporate communications for the branch. This includes their online presence and more traditional channels.

Rachel usually eats lunch in the kitchen area of her office, but today she and a few colleagues enjoyed their lunch at a local hotel. She enjoyed the seafood chowder with some homemade brown soda bread and Irish butter.

Rachel really enjoyed her lunch today. Brown soda bread is her favourite type of bread. It is made using sodium bicarbonate (otherwise known as "baking soda") as a leavening agent instead of the traditional yeast. It is usually made using whole-wheat flour and buttermilk. Irish people love to spread lots of creamy butter on their bread.

Regarding the soup: “As Ireland is an island, we have some of the best fish in Europe”, explains Rachel. Seafood chowder is a white sauce-based soup containing a mixture of white fish and shellfish. “The chowder was delicious”, she added.

The Irish Office is located in an industrial estate and there are not many food outlets nearby to visit. For this reason, Rachel mostly brings a packed lunch with her, opting for a salad. Lunch is at 1 pm daily. On rare occasions she and her colleagues order in pizza or get Chinese takeaway delivered.

The Cliffs of Moher are one of the landmarks that represent Ireland. Rachel elaborates: “The Cliffs of Moher are one of the most famous landmarks in Ireland. They are sea cliffs located at the southwestern edge of the Burren region in County Clare, Ireland. They run for about 14 kilometres. The cliffs take their name from an old promontory fort called Mothar or Moher, which once stood on Hag's Head, the southernmost point of the cliffed coast, now the site of Moher Tower. Many Irish folklore stories surround the cliffs of Moher.”
